tips:
i white paint the side of the timing belt at the original white marks .... help to line up marks easier
tie wrap the timing belt to the exhaust pulley, saves the need for growning a 3rd hand

Do the markings help align the crankshaft in relation to the camshaft? (which I assume is 'locked' anyway)

the pictures are for a 2.0TS, not a V6 but as you correct pointed out the cams are locked in place.
lock stamped with an I = Inlet
lock stamped with an E = Exhaust
BOTH inlet & exhaust pulley have rotate on their respective cams, the inlet alot more than the exhaust...... exh can only move by 1 tooth.
so in my case the timing belt was off by ONE tooth on the exhust cam, luckily there was enough slack on the pulley to allow it to come around to the right position.
the inlet can adjsut/rotate by 3 or 4 teeth
ALSO the directional arrows on the new timing belt MUST point in the direction of ration of the engine...

I are lost a bit here - if the camshafts are 'locked' how can the pulleys rotate

NOTE: CAM LOCKs are fitted to the wrong cams in this picture so i have obsecured them to avoid confusion
i wondered that too until i studied a picture similar to this:
inlet cam pulley, on the left, has 4 5mm allen headed bolts, they fit thro 4 slotted holes [ located behind the shiney disc ] .... thats the adjustment
exhaust cam pulley, on the right, has one 18mm bolt ..... very very tight [ 125Nm ] ... when loosened it has '1 tooths' worth of movement.

so there's enough friction caused by the hex bolts when 'torqued' to prevent movement in the pulley when engine is turning over?

Torque settings
General note: I always use a torque wrench wherever possible. I’m sure that the mechanic at my local garage doesn’t, and maybe it’s not always necessary, but it does give me peace of mind. But it’s up to you whether you want to do so or not.
